"Hidden beneath the main cocktail bar is a second, more intimate ten‑seat bar we lovingly call “The Speakeasy,” a darker setting devoted to a rotating cocktail tasting menu. I curate menus by theme or season—whiskies of the world, the origins of the Tiki cocktail movement, A Midsummer Night’s Dream, The Wizard of Oz—then have the chefs sample them first so they can build dishes around the cocktails while keeping the drinks as the primary focus of the experience.
