In the evening, he serves up dishes such as Allgäu venison with celeriac, hazelnut, cherry and purple curry. His cuisine is packed with flavour, intricate and sophisticated – but in no way contrived; it relies on high-quality fresh ingredients and a healthy dose of creativity.
