Although dry-aged, wet-aged and beeswax-aged beef steaks are signature dishes at this steakhouse, its grilled fresh seasonal squid, caught in the waters off Jeju Island, and ceviche are pleasant surprises as well. The way the steaks are grilled is extraordinary: They are cooked over charcoal at low temperature and cooled, with the process repeating for more than 30 minutes to maximize tenderness and juiciness.
