The cooking highlights that floral-spice thread—think caviar with pineapple and cilantro and a chicken sando lifted by aji Amarillo—while signatures like the Burger, Obvio (Piedmontese beef, thick patty, brioche toasted with rosemary-butter, bourbon-infused peppercorns, white cheddar, pickles) and delicate shrimp petals (Maine shrimp piped into shiso, flash-tempura fried) show comfort elevated by craft; the latter pairs especially well with the Paloma Claro.
