"Hidden away in the backstreets of Belfast’s historic Cathedral Quarter, this industrial-looking, dark and moody restaurant is bang on-trend and very much the place everyone is talking about right now. Its unusual name nods to a group formed here in the 1790s who became revolutionaries, and chef-owner Gareth McCaughey feels poised to spark a foodie revolution of his own. Low lighting, rustic tables made from reclaimed floorboards, and an open kitchen running the length of the room—where the team’s passion is palpable—create a refreshingly unpretentious air. As the first in the city to offer a surprise multi-course tasting menu, it’s going down a storm: modern dishes suit the setting and swing between pared-back plates built on a few top-quality Irish ingredients and more ambitious creations, both executed equally well. A Tyrone native who began as a pastry chef and values his time as sous chef at OX, Gareth ensures desserts are a highlight. Standouts from the surprise menu have included goat’s cheese and summer truffle; beef, carrot, short rib and bone marrow; halibut, Romesco sauce and courgette; rhubarb, orange and yoghurt; and chocolate, coconut and sea salt. An extensive cocktail list and carefully chosen wines—many available by the glass via Coravin—complete the experience.
