Taking its name from the Japanese word for “dream”, Yume provides chef Adrián San Julián with a platform to showcase his philosophy of sustainability and zero waste, hence the desire to use just one ingredient (such as onion, cauliflower, spinach, celeriac, cat shark etc) presented in many different ways in the same dish, at the same time exploring its different stages of preparation and intensity of flavours based around strong technique.
