Royal China in Dallas Celebrates Its 50th Anniversary | Eater Dallas

For 50 years it has built a reputation for serving some of the best Chinese food in Dallas by listening to customers and anticipating trends from across the Pacific. I learned from April Kao, who runs the restaurant with her husband George and manages the menu, that their approach balances staying traditional with gently introducing new, authentic items. Egg foo young is a best-selling, old-school item they briefly removed but reinstated because older clients demanded it; Kao admits it’s tedious to make. One of the restaurant’s signature dishes, dry stirred beef, has been on the menu since the beginning—originally added by the founder’s chef—and is made by frying crispy beef in corn starch and stir-frying it with a sweet, tangy sauce (Kao compares its appeal to General Tso’s and attributes its popularity to American tastes for sweet and spicy). They added a dumpling bar in 2008, and making dumplings in front of customers has driven a big increase in interest compared with the plain dumplings they served before. Kao also recommends the jian bing, a new street-food-style crepe made from mung bean and soybean flours with hoisin, green onion, cilantro, and crispy noodles, and says she’s trying to add more authentic dishes slowly—recalling a trip to Taiwan where a friend praised a Michelin-starred restaurant’s version of something similar to their dung-po pork belly, a moment she remembers with a laugh rather than a competitive claim that theirs is better. - Courtney E.
