In three-hour outdoor-kitchen sessions for about eight students, pairs knead ondeh ondeh dough, chop for a wing-bean salad and pound spices into rempah for a chicken curry, while taste-testing several varieties of gula melaka (palm sugar) and learning to “agak-agak” (estimate) seasoning.
