"About half an hour east of Inverness just outside Nairn, it doesn’t get more bucolic than this newly reopened hotel, which relaunched earlier this summer after an extensive refurbishment; artist Jonathan Gent—who recently worked on the buzzy central London restaurant Sessions Art Club—handled the design, and the food is by the team behind the Michelin-starred Trinity in Clapham. Housed in a Georgian mansion built in the 1820s for a baronet and his family, it still feels pleasantly posh, with purebred ponies—"the last of their breed"—as the only aristocrats living on the estate." - Zoe Dubno
