"Born from a family distilling tradition dating to 1782, this Dublin operation revived a dormant family trademark in 2012 and opened the first new distillery in the city in more than 125 years, bringing whiskey-making back to Dublin after roughly four decades. Located in the Liberties neighborhood, it blends heritage and modernity: everything is produced in small batches, experiments with cask types and finishing (including marrying grain and malt whiskies and finishing in Central American rum casks) to create sweet, spicy and woody character, and bottles at 46% ABV with no added color and no chill filtration to preserve natural nuance.
