Interiors by Jean-Michel Gathy favor a modern, minimalist sensibility while nodding to the property’s past (a sleek new bar is inspired by the original piano bar). New food-and-beverage offerings include an Italian grill, a lounge for afternoon tea and cocktails, and a breakfast room with live cooking stations; the hotel’s former three-Michelin-starred restaurant, St. Hubertus, will not be returning.
