The cooking reflects professional technique (informed by stints at Providence and Trois Mec) and proud California provenance: a 24-hour fermented dough made from very fine Tipo 00, stone-ground Buratto, and a heritage Rouge de Bordeaux flour for extra wheat-y flavor; a sauce of tomatoes cooked down for hours with dried oregano and thyme, high-quality garlic, and Thai chile powder for smoky spice; a nostalgic, maple-sweet sausage inspired by Jimmy Dean but punched up with Kashmiri chile, smoked paprika, and Thai chile; top-tier Wisconsin mozzarella; and finishing touches like leafy broccolini (whose leaves crisp in the oven), yellow broccolini flowers and purple borage for contrast, and a garlic oil made by poaching the farm garlic in high-quality olive oil.
