The dough is stretched by hand and topped with familiar favorites like margherita and marinara, but many of the pizzas push into creative territory with texture, flavor, and temperature contrasts, as in the Emporio with berbere-scented grass pea puree, sauteed chicory, beet chutney, and marinated Jerusalem artichokes.
