"Started as a drive-thru in Kingston by Jeremy Robinson-Leon with collaborators Alison Roman and Amiel Stanek, Moonburger is a vegetarian burger spot with a very slender menu (regular or cheeseburger for under $8, fries, and a couple of Oatly-based shakes, with gluten-free buns available) that has expanded to New Paltz and a Poughkeepsie location attached to a Route 9 Mobil where cars lined up at opening; the owner frames the brand as simply making a good, affordable fast-food burger rather than foregrounding meatlessness, and seasonal specials have included strawberries blended with Belgian Lotus Biscoff cookies." - Emma Orlow
