Pasta Restaurant Opens in Miami, Florida - Eater Miami
"Pasta, the new Italian restaurant helmed by Peruvian chefs Juan Manuel Umbert and Janice Buraschi, has officially opened in Wynwood. The duo, known for their well-respected Lima spot by the same name, brings their unique take on traditional Italian cuisine to Miami. “We opened a tiny restaurant in Lima with the goal of being the best pasta restaurant in the city. We are humbled by our success and Miami presented an incredible and natural opportunity for growth,” said Buraschi. Pasta’s menu showcases a blend of Italian classics and dishes that reflect the chefs’ Peruvian heritage. Starters range from housemade ‘nduja bruschetta to oyster tempura with aji amarillo, a nod to South American flavors. The pasta selection includes traditional favorites like pici cacio e pepe (cheese and pepper) alongside creative offerings such as fettuccine with housemade ‘nduja and mascarpone. Standout dishes include agnolotti di funghi (mushroom-filled pasta) with 36-month-aged Parmigiano-Reggiano and pappardelle with a 15-hour braised beef cheek ragu. For dessert, diners can choose from Italian staples like panna cotta al caffe or try the torta di pistachio di Bronte (Bronte pistachio cake). The gelato selection features unique flavors like lucuma (Peruvian fruit) and chirimoya (custard apple), further highlighting the restaurant’s Peruvian influences. The bar program includes a selection of Italian wines and cocktails, emphasizing negronis and spritzes. The 2,400-square-foot space seats 77 diners, with an open kitchen serving as the focal point. The Wynwood location blends rustic and modern elements, incorporating brick, wood, and metal. A few counter-seats offer a front-row view of the kitchen action, while brown leather banquettes line the dining room.
