"Today is opening day for the new Dallas location of Rush Bowls, a smoothie bowl chain out of Colorado. The 1,036 square-foot restaurant opens today at 5331 E. Mockingbird Lane in Mockingbird Station, helmed by husband and wife team Ted and Elizabeth Bachmeier. The choices go on and on when it comes to picking out a healthy snack: the shop will have 40 signature bowls or smoothies made with fruit and vegetable bases, including acai, kale and avocado, all topped with honey and organic granola. This is the start of a big splash in Dallas for Rush Bowls: Eater reported back in June that the chain’s also inked deals for locations in Flower Mound and Keller, and hopes to open up to eight new outposts are expected to open over the next couple years. The 14-year-old chain is expanding throughout the nation: over 70 Rush Bowls restaurants currently in various stages of development across 14 states." - Adele Chapin
