"Housed in one of Denver’s earliest fire stations at the corner of 20th and Chestnut Streets in the Union Station neighborhood, this newly restored neighborhood gathering spot occupies the former Hose House No. 1 — later a print shop in the 1920s and a welding shop until the 1980s — preserved after Focus Property Group worked with Historic Denver following its 2004 purchase and the building’s 1986 historic designation. Executive chef Kelli Daniels, formerly of Briarwood Inn and a noted competitor on Cutthroat Kitchen, Chef Wanted with Anne Burrell, and Chopped, has built a cohesive, approachable menu that blends Mediterranean family heritage with Lowcountry/Delta influences from her time in Memphis and “fire-driven” techniques that nod to the building’s past. The kitchen emphasizes Colorado-raised proteins and locally- and seasonally-sourced whole grains and greens, offering fire-inspired small plates alongside nostalgic classics for pre- or post-baseball outings. Standout dishes include Superior Farms lamb meatballs with smoked tomato sauce and feta; the Beet Down salad of quick-pickled and roasted beets, citrus segments, celery tops, toasted sunflower seeds and fresh buttermilk ricotta; Redwood’s cheddar and scallion biscuits with black pepper honey butter; Colorado bison short ribs with toasted garlic and scallion relish; and sweet potato and taro chips with harissa honey. The restaurant’s name honors Redwood “Woodie” Fisher, one of Denver’s earliest fire foremen who died trying to stop a runaway horse-drawn hose wagon in 1870." - Susan Stapleton
