"Now open at Resorts World, I found Wally’s Wine & Spirits — the celebrity wine destination with locations in Santa Monica and Beverly Hills — staking its claim as a place for high-end steaks as well as wines by the bottle or glass. The restaurant is offering a 200-day dry-aged rib-eye from Fleishers in Brooklyn priced at $1,000, and 50- to 60-ounce steaks grilled by executive chef Eric l’Huillier over almond wood and Bichotan Japanese charcoal, seasoned with truffle salt and black pepper and served with a black truffle bordelaise sauce, potato pomme Anne, grilled broccolini, and fresh shaved black truffles; the restaurant says it only carries a limited supply of the pricey beef. I noted the space blends a restaurant, social wine bar, and specialty gourmet market with a mind-bending 8,000-plus labels (more than 100 wines by the glass) and that Christian Navarro, the president and principal, has helped A-list celebrities like Jack Nicholson, Tom Cruise, and Diane Keaton with wine purchases. Aside from the steak, the menu includes pizzettas, King salmon with golden chanterelles, truffle Bolognese with veal and truffle ragu bianco, and Wally’s classics such as truffle lentils with English peas, truffle butter, and shaved truffle; the $30 Wally burger with American wagyu, Old Amsterdam Gouda, heirloom tomatoes, caramelized onions and Wally’s sauce on a housemade brioche bun with pommes frites; a $95 steak frites featuring a 19-ounce American wagyu New York strip with glazed cipollini onion and béarnaise; and a $100 chicken with smashed fingerling potatoes, broccoli, truffle chicken jus, and shaved truffles.
