"Opening Thursday, September 6, I can stop in at Nomad Taqueria and Beer Garden at the base of the Origin Red Rocks hotel before or after a morning Red Rocks run or an evening concert — the spot is open almost all day every day from 6:30 a.m. to 1 a.m. The Southwestern- and Mexican-inspired menu, developed by chef Christopher Medved after travels through the Four Corners and Mexico and years working at Denver spots like City O’ City, Steuben’s and Campus Lounge, ranges from breakfast burritos and guacamole toast to tlayudas (crispy tortillas topped like a pizza), chicken tortas and adobo-marinated pork loin, with three tacos for $12 and three tamales for $14.
