"There are plenty of fantastic places for sushi in Vegas, but few reach the literal and figurative heights of Ito, which opened on the highest floor of the Fontainebleau. Here, one of New York City’s most respected sushi spots serves a $400 experience for the ages, a dinner memorable enough to cap a lifetime of great omakase and worthy of its astronomical price. Expect 18-plus courses starting with sashimi and a few warm otsumami like black cod soup and a ceramic sea urchin shell filled with seasoned rice, ikura, caviar, and plump uni. A parade of absolutely stellar nigiri, including iwashi (sardine), scallop, kuruma shrimp, and chu-toro follows, each delightful and distinct. Ito is truly special, a real splurge in a sea of special occasion restaurants in Vegas. It’s hard to think of a better place to let go of any hard-earned casino winnings or a slots hand pay.
