"Named in honor of Crespo’s two Puerto Rican grandmothers, Dos Abuelas is a nomadic food truck through which Keigh Crespo organized donation collections (including efforts at Paul’s Coffee Shop), took in supplies, assembled a colorful volunteer crew — a carpenter, nurse, and engineer — and is currently organizing an April volunteer trip to Puerto Rico; she also cooks traditional meals on Friday nights at Finn’s Manor, which she says gives Puerto Ricans in Colorado "a little piece of home." - Camila Navarrette
