"Founded by a Seattle native and her partner after trips to northern Thailand, this Thai-inspired coffee business plans to roast and sell Thai-grown beans in the U.S. and open a North Seattle café with a permanent location slated for October 2025. Operating on a direct-purchase model, it sources shade-grown, organic beans from a seven-person Chiang Rai team and partners with a Seattle roaster for profiles like the initial Single Origin Chiang Rai, noted for apricot and plum with a clean finish. The concept blends Thai traditions with Pacific Northwest sensibilities: expect chilled fruit-and-coffee blends such as orange juice with espresso, butterfly pea matcha, Milo-style mochas, and oliang, plus sourdough from local Thai bakers, latte-art classes, rotating local art, and guest-chef collaborations.
