"Named for his late mother and opening December 5 in the former Smokehouse Tavern space, Delores will focus on a combination of traditional Polish dishes and eclectic, composed small plates that draw on Smith’s childhood: everything from potato-truffle pierogi to everything-spiced Parker House rolls with trout roe and CBD chocolate s’mores for dessert. I was told pierogi will always be on the menu and there may even be Coney Island hot dogs in honor of his parents; the cooking is Polish-inspired but seasonally driven and rooted in summers making pierogi with his grandmother and the big family parties he remembers. The space is getting a complete facelift centered around his mom’s favorite things (pink flamingos in particular), the food will be prettier and more composed than what he did at Smokehouse Tavern, dinner will be a bit more polished than lunch, and there will be attention to detail plus dessert and full lunch, dinner, and cocktail menus." - Brooke Jackson-Glidden
