"Since it hit the streets in 2014, I've watched the all-pink Hello Kitty Cafe Truck become a regular Southern California draw, making San Diego one of its recurring stops with a mobile shop chock full of adorable merch. Its day-long pop-ups — including one last fall at Westfield UTC — consistently draw crowds who clamor for limited-edition collectibles and sweet treats. The truck returns this weekend for a Saturday, January 11 appearance at The Shoppes at Carlsbad Mall (parked near the Regal Cinemas from 10 a.m. to 8 p.m.), and there's another pop-up planned for Saturday, February 1 at Otay Ranch Town Center (10 a.m. to 7 p.m.).
