"An intimate, 30-seat tasting-room opening the first week of October at 2201 W. 32nd Ave. in a former yoga studio below Ali Baba Grill will present 11- to 16-course tasting menus five nights a week. Led by Denver-born, New York–raised chef Alec Bruno — a former sous chef at Ocean Prime who also runs Catering By Chef Bruno — the program blends modern gastronomy with Italian and Japanese influences and aims to deliver exceptional service and a dining experience unlike anywhere else. The meal is conceived as an experiential journey: it might begin with a warm cloth steamed in lavender and cut grass for a springlike scent, move through different varieties of strawberries and a watermelon gazpacho topped with popped corn, include potato croquettes finished with Parmesan crème fraîche, truffles and caviar, and feature inventive dishes such as ramen served in an egg with pork belly and a pork skin crisp atop a soup dumpling or arancini made with Iberico lardon presented in nigiri style." - Rebecca Treon
