"A fixture in North County since 2003 in Leucadia, I note that Le Papagayo is opening a second, larger Carlsbad outpost on Carlsbad Village Drive in the former Cold Beer & Cheeseburgers space. Owner Darrin Campbell, who purchased the original in 2015 with the intent to expand, is converting the 5,500-square-foot site to be even more music-forward with a new stage and sound system to showcase their regular roster of artists, from solo guitar to classic rock, flamenco, and reggae. They’ll retain favorites from the original menu—including the bread and pesto basket, Spanish paella, Thai chicken satay, and the signature sangria—while adding a number of New American dishes across breakfast, lunch, and dinner. After some cosmetic changes, the Carlsbad restaurant, which includes a large outdoor patio, should be reopening in two to three months; the lease broker, Paul Ahern, praised the Campbells and said the concept will be a perfect fit for Carlsbad Village." - Candice Woo
