His Las Vegas restaurant merges his version of Southern food with Asian street food flavors. Here, oxtails are fall-apart tender — cooked down and scooped over a bowl of garlic butter noodles. Jumbo stuffed shrimp with lump crab are deep-fried and served with jalapeño dill aioli.
