"From Dutch Courage co-owners Brendan Door and Eric Fooy comes another smart, fun, educational corner bar. This time, the focus is on rum. With vivid, leafy murals and a decidedly tropical motif, The Pink Flamingo fittingly opened just as the temperatures warmed up at the start of April. In a space once occupied by the beloved neighborhood bar Dizzy Izzie’s (later renamed The Dizz), the concept has big shoes to fill. Unsurprisingly, on our first two visits, we’ve been impressed with the cocktails — namely the bitter, rum-based Whirlybird and the N/A amaro mule, The Road Less Traveled. Plus, the list of more than 150 rums complete with expert tasting notes should keep things interesting. Food service will be starting in the coming weeks with dishes like lumpia and a burger topped with pineapple jam. A second floor, decorated with vintage Pachinko machines, is available for dining and private events." - Jess Mayhugh
