"At Baked by the Ocean in Long Beach, I saw Cat Schimenti’s bombastic rainbow bars with thicker, more prominent chocolate and raspberry jam that includes seeds for a subtle crunch; she uses French almond paste (about 30 pounds a week) and cuts each bar by hand. Though labor-intensive and priced at $4.50, they’ve been a hit — she sells about 200 rainbow bars every Saturday, offers boxes of smaller cookies for parties, makes custom rainbow cakes, and even plants bar trim into giant cookies." - Caroline Hatchett
