"A popular Austin farmers-market stand run by Derek Desko that plans to expand into a food truck, focusing on fried pierogies—fried for a flakier, more tender texture—and a creative, fusion-driven menu. Signature offerings include potato-cheese pierogies topped with caramelized onions, horseradish sour cream, beet syrup, and pickled cabbage; the Kimcheese (squid-ink dough with kimchi-cheddar filling) topped with roasted pork fried rice, kimchi mayonnaise, pickled chiles, and garlic chile crisps; and a Chicken ’N Waffles pierogi made with maple-flaxseed dough and sweet potato filling, finished with buttermilk fried chicken, tomato relish, mayonnaise, and maple syrup.
