"A popular Austin farmers-market stand run by Derek Desko that plans to expand into a food truck, focusing on fried pierogies—fried for a flakier, more tender texture—and a creative, fusion-driven menu. Signature offerings include potato-cheese pierogies topped with caramelized onions, horseradish sour cream, beet syrup, and pickled cabbage; the Kimcheese (squid-ink dough with kimchi-cheddar filling) topped with roasted pork fried rice, kimchi mayonnaise, pickled chiles, and garlic chile crisps; and a Chicken ’N Waffles pierogi made with maple-flaxseed dough and sweet potato filling, finished with buttermilk fried chicken, tomato relish, mayonnaise, and maple syrup. The operator sells pre-cooked and frozen pierogi packs, sources many ingredients from fellow market vendors (such as Pedernales River Farm, Casper’s Fermentables, and Brangus Best Beef), and is already experimenting with expanded items like salads, soups, snacks, sandwiches and a highly indulgent pierogi burger/stall special that layers potato-cheese pierogies with a smash burger, lettuce, tomato confit, caramelized onions, horseradish sour cream, pickled cabbage, shaved green onions, and a Duke’s-mayo–based sauce. Desko—originally from northeast Ohio and trained at Le Cordon Bleu Pittsburgh with experience at several notable hotels and restaurants—aims to open the truck in South Austin, ideally inside a brewery or similar drink-focused venue, and is currently raising capital to make that move." - Nadia Chaudhury
