"I'm looking forward to Tacombi's first out-of-New York opening on Wednesday, December 8 at 1550 Crystal Drive in Arlington's National Landing. The 2,900-square-foot space, designed with local firm //3877, channels a worn-in 1970s taqueria with a curved facade, an indoor/outdoor bar counter, concrete tiles made in Mexico, bright mosaic artwork, and hand-painted Spanish menu signage. On the menu they’ll serve their beloved Baja beer-battered Alaskan cod fish tacos—the unchanged recipe that's long been a top seller in NYC—alongside scratch corn and flour tortillas (flour made with avocado oil; corn tortillas made from nixtamalized corn) that will be shipped daily from New York until local volume allows production here. I also note their colorful line of aguas frescas and natural sodas (Lupita) and packaged tortillas and products sold under the Vista Hermosa brand. Drinks include margaritas by the glass or pitcher, cans of Monopolio beer, mezcal mules, and mezcal shots served the Mexican way with orange and chile salt. Founded by Monterrey-born Dario Wolos from a 2006 taco stand in Playa del Carmen (sold from a converted VW bus, or “combi”), the brand relocated to the U.S. in 2010 and emphasizes authentic regional traditions—like a thin Mexico City–style al pastor available in tacos, quesadillas, and burritos—and a team culture that strives to feel and live the connection to Mexico." - Tierney Plumb
