"Opening this spring at 4920 Telegraph Avenue in Oakland, Forma Bakery is a Schnetz family neighborhood bakery focused on croissants and conchas; father Thomas and son Jackson Schnetz are bringing French laminating technique to Temescal while drawing on Jackson’s upbringing in the family’s Mexican restaurants. Jackson, who ran the viennoiserie program at Fournée in Berkeley, plans to make about five sourdough loaves and three enriched breads (brioche, croissants, and conchas), keep a simple espresso-machine drink menu while the coffee partner is finalized, and emphasize flaky, buttery croissants inspired by Arsicault and B. Patisserie. The conchas will be bold and carefully made—Jackson will debut a nutty ash-flecked concha he learned while staging at Enrique Olvera’s Criollo in Oaxaca and rotate seasonal options like California sweet corn in summer. Designed for counter service and takeout with a few benches out front, the shop’s blue exterior and rustic, simple interior nod to Mexico City and Oaxaca aesthetics and mirror the family’s other businesses; rough hours will be 8 a.m. to 3 p.m." - Paolo Bicchieri
