"Opening this spring on Rainbow Boulevard near Russell Road in Spring Valley, this new brunch-and-cocktail spot emphasizes relaxed, unhurried dining where guests are encouraged to linger over food and drinks. Chef Jhon Castro and the Umbrella Consulting Team are rolling out playful breakfast staples with a twist—highlighted by items such as 66-degree country fried eggs, a tater tot hash, chicken and waffles, soft-shell crab eggs Benedict, a New York steak sandwich, and Colombian coffee waffles—alongside a dedicated vegan menu offering vegan omelets, Benedicts, quiches, sandwiches, and waffles. Cocktails aim to be theatrical and nostalgic, from customizable bloody Marys prepared tableside from a bloody Mary cart to an adult cereal cocktail with Baileys and a POG (pineapple, orange, guava) tea cocktail served in a vintage teacup garnished with fresh flowers. The interior will feature a contemporary palette of golds, creams, corals, and blues with subtle decorative nods to the restaurant’s name woven into mirrors, wallpaper, and fixtures; the concept is led in part by partner Kristen Corral (co-owner of Tacotarian) and draws on Castro’s experience at notable Las Vegas restaurants such as Sparrow & Wolf, Mercadito, Bazaar Meat by José Andrés (Sahara), and Sushi Roku (Forum Shops at Caesars)." - Susan Stapleton
