"I visited the Hong Kong–based Hui Lau Shan's first permanent U.S. outpost, which quietly opened on Northeast 24th Street in Redmond, and even while the restaurant worked out kinks there were already lines out the door. The bright, inviting shop has plenty of seating and cartoon murals that trace the chain’s timeline from its 1960s beginnings as a Hong Kong herbal tea specialist to its evolution into a mango-focused dessert brand. The menu offers an array of fruit-filled desserts — mango sago bowls, mango pancakes, durian glutinous rice, and red dragon fruit slushies — and the Eastside location feels well chosen amid a local mango craze, seeming to get a head start on competitors like Mango Mango Dessert. A Hui Lau Shan rep explained, “We want to increase the productivity before we open regularly.”" - Gabe Guarente
