"Opening this May inside the Ilumina on Raiders Way apartment complex near the M Resort, this Italian bistro is led by executive chef David Jones (formerly of Jean-Georges Steakhouse at ARIA and Prime Steakhouse at Bellagio) and chef de cuisine David Doyle (formerly of Prime Steakhouse and Joël Robuchon at MGM Grand). The menu mixes approachable Italian-driven dishes and classics, with highlights including a shrimp ceviche with blue corn, a pizza topped with prosciutto and soppressata, smash burgers, mushroom bolognese pasta, and braised short ribs with polenta, plus lunch items like tomato bisque, half-roasted chicken, avocado toast, and a wedge salad. The beverage program features classic wines, local beers, and cocktails made with seasonal herbs from an on-site garden.
