"I was just trying to make tavern-style pizza for my fiance and me as a hobby, but making this pizza turned into an experience — nostalgia for Midwesterners and something new for Portlanders — and it grew quickly from my home kitchen to an Instagram pop-up and now a home inside a Southeast Portland dive bar. I made pizzas every day, tweaking them and asking for feedback; even early on people kept saying, “This is incredible,” but I battled imposter syndrome and insisted I wouldn’t open officially until the pizza was 110 percent dialed in. Moving into the tavern gives me room to scale while keeping the taste and texture I developed at home, though demand is huge (there was over a year-and-a-half wait when I stayed at home doing it)." - Molly J.
