"Housed in one of Downtown Golden’s three original late-19th/early-20th-century structures that once contained the International Bowling Saloon and later the Buffalo Rose Saloon, I found this longtime bar—one of the oldest in Colorado—has just completed a remodel that retains most original building structures and even reuses historical materials harvested from the job site. The renovation includes a refreshed Old West dining room-lounge, a cocktail bar, newly constructed indoor and outdoor bars, and a state-of-the-art commercial kitchen, and the menu focuses on regionally inspired American cuisine with a Latin twist for lunch and dinner. New dishes I noticed include chorizo jalapeños with cherry chipotle glaze; salads such as the Aztec Caesar with chili-rubbed top sirloin and jalapeño blue cornbread; a pulled lamb sandwich with smoked lamb shoulder and apple jicama slaw; and entrees like pan-seared salmon in Hatch chile broth, all overseen by chef Jan Vonada under owner Chris Cone. The large outdoor patio features fire pits, live music, a full-service bar, and a retractable glass roof, and the restaurant lists weekday happy hour from 3 to 6 p.m." - Susan Stapleton
