"Housed in the 40,000-square-foot former Fraser’s Boiler Service building, this newly activated dining and drinking destination—dubbed the 'Acre of Awesome'—brings together multiple employee-owned concepts led by Thorn Brewing founder Dennis O’Connor. I appreciated the sustainably minded design from creative director Christine Cole, who used up-cycled elements (a bar made from a repurposed horse trailer and furniture from shuttered restaurants) and implemented a zero-waste approach with no single-use plastics and partnerships to turn kitchen scraps into compost or animal feed. Thorn Brewing, which established a production facility and tasting room in the space in 2017, anchors the project, and beverage director Gareth Moore plans a seasonal cocktail program using the house spirits (including the Rose Gold with ReBru Vodka, lime, and Lo‑Fi Gentian Amaro), with batched cocktails eventually canned as Sideyard Cocktails." - Candice Woo
