"On May 14, Andina will reopen with a new chef: Alexander Diestra, formerly of Saucebox and Clarklewis, will take over the kitchen at Andina, making a big introduction with a new takeout pop-up. Chicha specializes in Peruvian street foods, as well as Nikkei (Peruvian-Japanese) and Chifa (Peruvian-Chinese) cuisines. The menu will have standards like ceviche, empanadas, and anticuchos, as well as harder-to-find dishes in Portland like min pao. Diestra grew up in El Callao, Peru, where he says he pulled much of the inspiration for the new takeout concept.
