"A longtime locals’ favorite for breakfast, lunch, and dinner, this diner—helmed by chef and namesake Norm Chan, who began his career at the former Las Vegas Hilton and recounts a memorable encounter with Elvis on the back of the menu—offers a large, varied menu of breakfast specials, burgers and sandwiches, and dinner entrees like salmon teriyaki and osso buco. A tie-in “Elvis Chopped Steak” is served from 11 a.m. to 9 p.m., and the restaurant touts the “best benedicts in town,” made with freshly made Hollandaise and choices such as crab cakes, shrimp & avocado, and filet of beef. After moving into a corner site on Durango Drive in early 2017 (now at its current address), the operation remains open daily in Spring Valley and is expanding to a Champion Village Plaza location near the I-215 and Gibson Road interchange in Henderson; the new spot is slated to open in early February and is currently hiring." - Bradley Martin
