"Powwow Pizza, led by chef Maurice Yim, is set to open in Long Beach, transforming a longstanding pizzeria into a venue with a diverse pizza menu inspired by global and Cambodian flavors. The menu will feature unique options like mole sauce, a Filipino-style pizza, and a Cambodian-inspired pizza with lemongrass, turmeric, galangal, garlic, ginger, chicken, watercress, and mozzarella. Prices range from $10 to $20, and the pizzas will be served in bright pink boxes, a nod to the Cambodian donut shops in Southern California. The venue will also collaborate with local breweries like Liberation Brewing Company and Ambitious Ales, incorporating spent grains and beer into their pizzas.
