I find the fast-casual menu stays true to Texas classics: the best-selling Trinity (eggs, bacon, potato, and cheddar) and the Pecos (eggs and shredded brisket) sit alongside the Blanco (organic egg whites, shiitake mushrooms, and Monterey jack); the tacos use pasture-raised eggs and fresh flour tortillas made to a family recipe. Other Lone Star specialties include migas (eggs scrambled with crispy corn tortilla strips), Frito pie, and homemade queso, and the cocktails—like a frozen spicy Paloma and a Ranchwater tequila highball—are also sought-after.
