The collaboration spotlights extreme care in ingredient selection and butchery: cuts were dialed in through multi-day work in New York with Pat LaFrieda and are made each night, rested, shipped, and then grilled a la plancha for service. Three of the four tacos feature specific beef cuts — the Gaonera (based on filet mignon), the Costilla (from the rib), and the Bisteck (using a round tip cut) — while the Chuleta is a pork-chop-topped taco; cilantro and onion are omitted to let the meat shine.
