"The club’s head caterer, Karla Ruiz, who was born and raised in Mexico City and learned to cook from her grandmother and mother, has used local Tennessee ingredients since moving to the Nashville area in 2000 to create Mexican-inspired dishes without limits. She sources produce from local markets and is especially known for her peach empanadas, which began as a way to use leftover peaches and spare bits of handmade dough; local peaches are cooked with sugar and cinnamon and wrapped in a dough made with flour, lard, and beer.
