"It’s a Twin Cities first; conveyor belt sushi is now available in downtown Minneapolis at 1200 Nicollet Mall. Opening at 11 a.m. Friday, June 1, the new Sushi Train — started by partners including Kevin Ni, who comes from sales while his partners had restaurant careers — is modeled after a subway station with bright colors and a one-of-a-kind conveyor belt that runs through the restaurant and uses sensors and timers to keep food fresh so customers don’t have to order and wait. Plates run from $1.50 to $5.50 and diners are charged by how many plates they grab, though you can also order from a menu of classic rolls and poke bowls full of rice and tuna or salmon; Ni says the fish is fresh and all comes from Japan. Located on the corner of Nicollet and 12th Street, a block down from Brit’s Pub in an area with few sushi options, Sushi Train will begin with limited hours and plans a grand opening in a few weeks after working out the kinks — it’s meant to be a fun, unconventional experience." - Susan-Elizabeth Littlefield
