Hope Breakfast Bar Will Open Second Location in Saint Louis Park | Eater Twin Cities

"Known for over-the-top twists on breakfast classics—like red velvet pancakes topped with cream cheese frosting—the all-day breakfast eatery run by owners Brian and Sarah Ingram will open a second location in St. Louis Park inside The Shops at West End mall complex, next to The Local Irish pub, sometime later this fall. The restaurant pairs coffee and cocktails with breakfast all day and is noted for its charitable giving: when it opened the operation pledged that a small portion of all proceeds would go to charity, offered free meals to food-insecure kids during the St. Paul teachers’ union strike in February 2020, and continued providing free meals, collecting and distributing groceries, and serving frontline workers during the pandemic. The new location will feature giant glass garage doors that roll up in warmer months, a full bar serving both coffee drinks and cocktails, and removed walls to create a large, open space meant to “bring all of the Hope colors and love,” and if all goes smoothly it should open before the first snowfall." - Joy Summers
