The concept comes from chefs Carmen Ángel and Rob Pevitts, the minds behind Carmen, located next door, and other restaurants scattered around Colombia. They anchor the menu with fusion dishes influenced by Japan, Thailand, Vietnam, and Malaysia. Bao come filled with fried fish, corn nuts, cabbage, and leche de tigre spiked with sofrito-like hogao sauce, while temaki contain shrimp, salsa rosada (mayo mixed with tomato sauce), red onion pickled in lime, and cilantro.
