"I see Ipsa Provisions as a fine-dining take on frozen meals: co-founded by Joshua Brau, a former Blue Apron brand director and Chipotle corporate manager, and Micah Fredman, a veteran of upscale restaurants turned private chef, it launches on February 11 with initial delivery across Manhattan and Brooklyn. Meals are made in a licensed commercial kitchen in Long Island City and are delivery-only for now; they feed two to three people and generally cost $21–$25 each (examples include beef and kimchi stew with Korean rice cakes, coconut curry with vegetables, and charred pineapple pibil with chicken). Customers can order weekly on Ipsa’s website without a subscription, with a $55 minimum per delivery, and meal prep usually involves little more than defrosting on the stove.
