"After launching as a small Broadway Alley pop-up in July 2020, I checked out Blotto’s newly opened fixed location in the former Chungee’s space and found a cozy counter-service spot serving much-coveted naturally leavened sourdough pies — thin-crust New York and Neapolitan-style pizzas that have frequently sold out — with rotating offerings like a fennel sausage pie and one topped with pickled leeks, lemon cream, and chili oil. The co‑founders emphasize using local producers (sausage from Olsen Farms, cheese from Cascadia Creamery, and grains from Skagit Valley), and they’ve added a thoughtfully curated specialty grocery market stocked with both local purveyors and out‑of‑state producers new to Washington.
